LETTER E OF A-Z OF FOOD IDEAS FOR TODDLERS
This is Letter E of our A-Z of food ideas for toddlers!
We teamed up with Kelly, a very special friend from @eattherainbow_kids - she inspired the A-Z of food ideas series with her NourishABC series and is consistently inspiring us to try new and fun foods.
She also started a Colour Week series so we are putting a fun spin on our Letter theme with the Colour Green! Each week she has a different colour week, and her insta grid is PHENOMENAL!
If you don't already follow @eattherainbow_kids - you really should, she is always sharing colourful, creative, fun foods and lunchboxes for little ones.
For our Letter E and Green Themed meal we made an EASY EGGY Fried Rice Share Bowl with EDAMAME and EVERYTHING Bagel Seasoning. My boys loved this for dinner, I empower them to plate up from the share bowl so they can choose what goes on their plate. We've been having so much fun with shared plates and bowls lately and my boys have really been impressing me with what they are willing to plate up and try when I give them the power to decide.

Easy Eggy Fried Rice Share Bowl

To make the Easy Eggy Fried Rice

You will need:

  • 2 heaped tablespoons butter
  • 4 large eggs, scrambled
  • small onion
  • 1 cup frozen peas, carrot and corn
  • minced garlic
  • salt and black pepper
  • 4 cups cooked and chilled rice (this will feed the whole family!)
  • handful of spring onions, thinly sliced
  • 1/2 small can of diced pineapple (optional)
  • 4 tablespoons soy sauce, or more
  • 2 teaspoons oyster sauce
  • dash of toasted sesame oil
  • sprinkle of Everything bagel seasoning


To add the GREEN the bowl:

  • cucumber diced
  • handful of iceberg lettuce shredded
  • handful of edamame (I shell the beans of a few too)
  • handful of brocolli steamed
  • 1/2 avocado sliced
  1. Saute onions and garlic: use half your butter, melt and saute garlic and onions. Once onions are softened add the frozen veggies.
  2. Stir fry rice: On high heat add remaining butter before adding your rice, mix through before adding sauces. Once the rice and veggies start browning add in pineapple, spring onions and sesame oil. Cook for a few additional minutes.
  3. Scramble eggs: Scramble your eggs, you can set aside, or optional you can stir through the rice. My kids love picking out the eggs, so I keep it separated.
  4. Plate up: Add your rice and all your green yummy goodness into a bowl. Sprinkle with some everything bagel seasoning and enjoy!


Note: all the above foods are safe foods for all my three children which made sharing easy and created no issues where foods were touching. In circumstances where this is an issue I would use our Baby by Beach dividers in our tableware set to help separate the foods from touching.

If you have picky eaters at home, or struggle introducing new foods to your kids you should definitely try a letter themed meal or colour themed meal! 

Get the kids involved in the shopping and in the kitchen, make mealtime fun and engaging for them and you might see some changes in their acceptance to try new things!
